Class Description:
Learn how to achieve success as taught by a KCBS World Champion. Richard Fergola has earned dozens of Grand and Reserve Championships, numerous perfect 180 scores and 700 point pins and will teach you the recipes, methods, and process to take your game to the next level!
This class will cover all four KCBS competition meats over 2 days, from meat selection to trimming, from seasoning to slicing, along with fire maintenance and fuel choices. Chicken, Pork Ribs, Pork Shoulder, and Brisket will be extensively discussed, including injections, wraps, and more!
